Cilantro Pepper Jack Biscuits with Sweet Salsa Jam

1 1/2 Cup Flour
2 1/2 tsp. Baking Powder
1/2 tsp. salt
1/2 cup yellow cornmeal
1/3 cup shortening
2/3 cup milk
1 tsp. cumin
1 cup chopped cilantro
1/2 cup shredded pepper jack cheese
1/2 cup shredded colby jack cheese

Sweet Salsa Jam:
1 cup chunky salsa
1 tbsp. brown sugar


Preheat oven to 450 degrees
Mix all ingredients together in a large mixing bowl.
Knead the dough into a ball
Use biscuit cutters to cut out biscuits and place on greased baking sheet
Place in the oven for 15 minutes or until golden brown

Sweet Salsa Jam:
Heat ingredients over medium heat until blended Servings: Makes 10-12 biscuits
