Pork Quesadilla Don Gallo Style

2 lb of pork
1 chile chipotle
1/2 cup apple vinegar
salt to taste
chile guajillo
orange juice
1 clove of garlic
flour tortilla
mozzarella cheese
Mexican rice, red


In blender mix: Guajillo chili, orange juice, 1 clove of garlic,
Onions, salt, vinegar until smooth mix.

Then cut the pork in small pieces of meat, place meat in a glass bowl, and pour the mix from blender to the meat. Cover with aluminium foil. Marinate in the fridge for 24 hrs.

After 24 hours cook meat in a Teflon or non-stick casserole dish with some oil for 2 or 3 minutes, or until the meat is fully cooked.

Served on flour tortilla, use cheese, cilantro, onion and tomatillo
Salsa to fill the quesadilla with.

Can serve with a side of rice.
