Watermelon BBQ Sauce

4 cups peeled and diced watermelon, seeded

1 c. corn syrup, light

1/2 c. orange juice

1/4 c. sweet chili paste

3 T. hot sauce, your favorite

2 T. kosher salt

1/2 c. apple cider or sherry vinegar

3 T. cornstarch

3 T. cold water

1 T. granulated garlic


In 4qt. stock pot add everything except cold water and cornstarch. Cook over medium heat for 15-20 minutes, stirring to break down watermelon. When it is mostly broken down, puree watermelon mixture in food processor or blender. Return to pan, over low heat. Mix together cornstarch & cold water to make a slurry. Slowly add slurry to watermelon mixture until thick. Yield about 4 cups.
