Strawberry French Toast Casserole

French Toast Casserole
1 loaf French bread (16oz)
8 large eggs
2 cups half-and-half
1 cup milk
2 TB granulated sugar
1 t vanilla
1/4 t cinnamon
1/4 t nutmeg
dash of salt
Praline topping (recipe follows)
maple syrup
fresh strawberries
strawberry cream cheese

Praline Topping:
2 sticks butter
1 cup packed light brown sugar
1 cup chopped nuts (almonds or pecans)
2 T light corn syrup
1/2 t cinnamon
1/2 t nutmeg


Slice French bread into 20 slices (or buy pre-sliced bread). Arrange slices in generously buttered 13 x 9 baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, cinnamon, vanilla, nutmeg and salt. Beat with a mixer or whisk until blended but not too bubbly. Pour mixture over bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between slices. Cover and refrigerate overnight.

For praline topping, combine all ingredients in a medium bowl and blend well.

When ready to bake, preheat oven to 350ºF. Spread praline topping evenly over casserole and bake for 40 minutes until puffed and lightly golden. Serve with dollop of strawberry cream cheese, fresh strawberries and maple syrup.
