2 cups grape or cherry tomatoes, halved
1 English cucumber, halved and sliced
1 red bell pepper, cut into thin strips
1 orange or yellow bell pepper, cut into thin strips
1 cup fresh (off the cob) corn kernels
1 cup diced, firm fresh peaches (about 2 medium)
1 cup green onions, thinly sliced
1 small (8-oz) package whole wheat penne pasta
2 cups shredded cooked rotisserie chicken
Toss together first 7 ingredients in a large bowl. Add dressing (see under recipes-salads). Let sit for at least 10 minutes.
Meanwhile, prepare pasta according to package directions. Add hot cooked pasta and chicken to vegetable mixture. Season with pepper or preferential seasoning, to taste.
