Potato Salad

5 lbs. Yukon Gold Potatoes, unpeeled, uncooked
6 hard boiled eggs, sliced
3 ribs celery, thinly sliced
1 small red onion, diced
2 cups Hellman's mayonnaise
2 tblsp. Dijon mustard
2 tsp. sea salt
¾ tsp. ground pepper


Wash and scrub potatoes. Place in a large pan and cover with cold water, heat to boiling. Turn down to a simmer and cook until you can insert a knife in the thickest part of the potato and it is tender. Drain potatoes in a colander and rinse with cold water until partially cool.
When potatoes are cool, peel and cube. Add four hard boiled eggs, celery and red onion and mix gently.

In a small bowl mix mayonnaise, mustard, salt and pepper. Pour over potato mixture and toss gently to mix. Garnish with reserved hard boiled eggs.
