Ingredients:

1 qt. black eyed peas, cooked (or 2 cans of canned peas)

1 medium red onion, (1 cup)

1 red bell pepper, seeded & diced (1 cup)

1 yellow bell pepper, seeded & diced (1 cup)

1 bunch cilantro, washed & leaves picked off, rough chopped

1 jalapeno pepper, seeded & minced (1/2 cup) Leave seeds in if you want it hotter

zest from 2 limes

1 T. minced garlic

2 T. fresh lime juice

2 T. red wine vinegar

2 T. kosher salt or to taste

1 T. black pepper

1/2 cup olive oil

Directions:

Combine all ingredients in mixing bowl. Toss, season with salt & pepper. Refrigerate for at least 1 hour. Serve with chips or with your favorite salad greens.
