Shrimp & Cucumber Sesame Salad

9 oz rice noodles

1 lb cooked peeled shrimp
1 cucumber peeled, quartered, de-seeded and cut into diagonal slices
4 green onions thinly sliced
4 T. toasted sesame seeds

sesame ginger dressing


Break the noodles into thirds and place in a heat proof bowl. Pour boiling water over them and leave for 3 minutes then drain and rinse under cold water. Place noodles, shrimp, cucumber and onions in bowl. Toss with dressing and top with toasted sesame seeds
