1/2 cup mayonnaise
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
6 cups mixed salad greens
1 medium onion, red or sweet white, thinly sliced
1 (10 ounce) package frozen baby peas, thawed, rinsed and patted dry
8 ounces Swiss cheese, julienned
1 pound crisply fried bacon, crumbled
In a small bowl, whisk together mayonnaise, sugar, salt and pepper. Set aside. In a large salad bowl, layer one third of the salad greens, one third of the dressing mixture and a layer each of the onions, peas and cheese. Repeat layers. Cover and chill at least two hours. To serve, add bacon and toss until well mixed.
Cook 's note: if you anticipate leftovers, serve the bacon on the side and let each guest garnish as desired.
