Kroger Sweet Taste of Honey Bourbon Chicken
By: Chef Andre Nowading, Kroger
This great summer recipe makes a spice rub and glaze that is delicious on just about any kind of protein - chicken, seafood like salmon, ribs, or pork loin. It is equally at home on the grill or in the kitchen. You can make both the rub and glaze ahead of time and use it as needed.
It makes enough for feed 10-12 people.
1 tin Kroger Private Selection Sweet and Spicy Seafood Rub
2 packages Grill mates Brown Sugar Marinade
1 bottle Kroger Bourbon Peppercorn Marinade
¼ cup honey
1 bunch of green onions, chopped with half set aside for garnish
Mix spice rub and season meat or seafood and set aside for 10-15 minutes to let spices be absorbed by moisture in the meat.
Bring the glaze ingredients to a boil in a pan and set aside.
Grill (or bake) seasoned meat until nearly done and baste with glaze. Remember that food continues to cook after you pull it off the grill so don't overcook and dry out your meat. Be careful on a grill because the glaze caramelizes quickly.
Pair with grilled ears of corn and grilled portabella mushrooms to make a satisfying meal that bursts with flavor.
