Pan Seared Scallops with Grapefruit Berre Blanc

3 each scallops
1 cup grapefruit juice
2 T. heavy cream
1 T. Shallot
1 tsp. white wine
1 tsp. chives
4 T. butter


Sear scallops on both sides.
Reduce wine and grapefruit juice in a sauce pan then add cream to the sauce and season.
Add butter in, slowly whisking until sauce is blended.
Salt and pepper to taste and serve.
