Smoked Almond Mahi Mahi

Ingredients:
1 six ounce filet Mahi Mahi
1/4 cup Blue Diamond Smokehouse flavored almonds
4 oz Uncle Ben's Whole Grain Medley Rice (Microwaveable packet)
Green Onions
Sweet Snap Peas
Fresh Lemon

Directions:

Microwave Uncle Bens Whole Grain Medley Rice by following directions on packet (about 90 seconds.) Once done, place 4 ounces of the rice in aluminum foil.
In a layered fashion, next add snap peas (8 to 10) and green onions (3 to 4).
Lay the 6 oz Mahi Mahi fillet on top of the bed of rice, snap peas, and onion.
Sprinkle the fillet with 1/4 cup of crushed smokehouse flavored almonds.
Add two 1/4 inch slices of lemon on top of the crushed almonds
Place in oven or grill at 350 degrees for 20 minutes or until white and flakey.

Tip: allow air movement inside the foil (don't wrap tightly) so the moistness of the rice is actually steaming the fish.

What we like about this summer time recipe is the fact that it is healthy, filling, and the clean up afterwards is a breeze.
