Kroger BBQ Shrimp and Peach Kabobs

Serves 3-4 people

1 pack long wooden skewers

1 lb. 20-25 count raw shrimp, peeled and deveined (cleaned)

3-4 fresh peaches, cut into large cubes (skin can still be on)

1-2 white or yellow onions cut into wedges to skewer easily

½ cup lime juice

1 Tablespoon brown sugar

1 teaspoon chipotle chili powder

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon cayenne pepper

½ teaspoon oregano

Vegetable oil to brush grill grate


Mix spices, sugar, and lime juice together in a bowl.

Toss shrimp and peaches in mixture and reserve remaining mixture for baste.

Skewer shrimp, peaches, and onions with shrimp on ends to hold peaches on skewers.

Grill 3-4 minutes per side and baste with remaining liquid.

This meal could also be sautéed and served over rice pilaf.

Serve with a fresh salad or green vegetables!
