New Orleans's Style Bread Pudding

1/2 pound stale bread, torn into pieces
1 cup raisins
5 eggs
pinch of salt
1 can evaporated milk
2 teaspoons vanilla
3/4 cup sugar
3/4 cup boiling water
1 tablespoon cinnamon

3/4 cup sugar


Arrange bread in a large baking pan.
Sprinkle raisins in and onto bread.
In large bowl combine eggs, salt, milk and vanilla.
Dissolve the sugar in the boiling water then add to egg mixture.
Pour mixture over bread and let stand for ten minutes.
Sprinkle combined sugar and cinnamon into and all over bread mixture.
Cover with foil and bake 350 for 45 to 60 minutes.


Butter Sauce

Heat 1/4 cup water to boiling in a double boiler.
Add 1 cup sugar, stir until melted
Add 1 cup liquid butter; cook until hot
Remove from heat. May add 1/4 cup rum at this point, if desired.

Pour sauce over each serving.
