Tellico Grains Donut Muffins

1 cup granulated sugar

2 large eggs

5.3 ounces butter, melted

3 cups all purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon nutmeg

1 cup of milk or buttermilk

*1 cup of optional add ins like blueberries or chopped peaches

 

In a medium bowl, whisk together melted butter and sugar until smooth.

Add eggs and vanilla to butter and sugar and whisk until smooth.

In a separate bowl, sift together flour, baking powder, salt and nutmeg.

Fold sifted flour mixture and milk alternately into egg mixture with a spatula until ingredients are well incorporated.

*Fold in optional add ins until evenly distributed.

Spray muffin tins very liberally and scoop muffin batter 3/4 full directly into the tin with no muffin liners.

Bake at 375 for about 15 minutes or until tops of muffins are firm when touched. 

 

Cinnamon Sugar Donut:  Dip top and edges of cooled muffin into melted butter and roll in cinnamon sugar.

Glazed Donut:  (glaze recipe:  1/2 cup melted butter, 3 cups powdered sugar, 2 teaspoons vanilla, 6-9 tablespoons milk, stir until smooth )

                           Dip cooled muffin in glaze and let it set for a few minutes 

 

*Makes 12-14 standard sized muffins.
