Kroger Superfood Salad

1 bunch kale, washed, picked clear of main stems, and in bite-sized pieces

1 lb. edamame beans

1 cup shredded carrots

1 cup shredded green cabbage

1 container cherry or grape tomatoes

1 cup blueberries

1 cup dried cranberries (Craisins are a good substitute)

1 cup roasted cashew pieces

1 cup roasted sunflower seeds

½ cup red onions, chopped

1 cup Kroger Private Selection Raspberry Vinaigrette (or your favorite dressing)


Mix all ingredients and enjoy.


This salad is available at most Kroger stores in the deli department with a delicious Blueberry Pomegranate Dressing instead of the Raspberry dressing

Serves 4
