Blue Cheese Crisps

8 ounces crumbled bleu cheese
1 stick butter, softened
1 1/3 cups all purpose flour
3 tblsp. poppy seeds
1/4 tsp. ground red pepper
1/3 cup cherry preserves


Beat bleu cheese and butter at medium speed until fluffy. Add flour, poppy seeds and red pepper, beating just until combined. Roll dough into 3/4 inch balls, cover and chill about an hour.

Arrange balls on an ungreased baking sheet and press thumb into each ball, leaving an indentation.

Bake at 350 degrees for 15 minutes or until golden. Transfer to a wire rack & cool. Place about 1/4 tsp. cherry preserves in each indentation.

You can also form dough into a log. Wrap in plastic wrap and chill. Slice into 1/4 inch slices and place on an ungreased baking sheet. Bake at 350 for 10-12 minutes. Omit cherry preserves.
Store in an airtight container for up to 1 week.

Makes about 4 dozen.
